It’s the time of the year where fruits are plump and juicy, and it’s so easy to splurge on all of your seasonal favorites. When you’re in over your head with summer produce and they’re becoming overripe, it’s not too late to get the maximum use out of your tasty finds!
Smoothies & Iced Fruit
If you pick up your mango and it doesn’t look quite as bright and beautiful as it did last week, there’s still time to enjoy it. Like we mentioned last time, a smoothie is great for breakfast on the go. You can keep it simple with one fruit and some ice, or knock it out of the park with mixed berries and milk.
Fruity ice is super fun for cold beverages on the deck. Getting the juice out of your fruit will be easier with a juicer, but you can still get it done with the back of a spoon. Juice all of your overripe fruit into a bowl, and then mix in any additional flavors or seasonings before you pour them into an ice cube tray. You can use the fruity ice in water, lemonade, or even a weekend cocktail.
Jams & Cobblers
You don’t have to go through the long, hot canning process to get a tasty jam. Once your fruits are overripe, all you have to do is put them in a saucepan and sugar to taste (optional). While the fruit is cooking over a medium heat, mash the fruit with your cooking spoon until it begins to smooth out and boil. Once the fruit has an attractive texture, you’ll spoon it into clean jars and refrigerate. What you do with it from here is up to you! Your fruit jam can serve as a tasty spread, cobbler filling, or dessert layer.
Dressings and Sauces
This one’s going to take a little judgment and creativity on your part! If your fruit isn’t pretty enough to present on a salad, you can puree it in a blender or food processor. The fruit is going to add natural sweetness to your dressing, so you’ll want to shy away from sugar and try to mix in olive oil, vinegar, or herbs.
Fruit is also a fun way to spice up a savory sauce. If the fruit hasn’t lost all of its fruit, it’s easy to chop it into small pieces and cook into a chicken stock with balsamic vinegar. Just like that—you’ve got a nice glaze for the main dish! But whether you go for lemon-glazed chicken or a crazy blueberry salmon is all on you 😉
